empty spaghetti sauce-size glass jar
apple cider vinegar (ACV)
pure / filtered water (i use a tap filter)
1-1/2 cups raw red wheatberries
unbleached coffee filter
rubber band
towel or cloth
empty glass jar w/ lid (an old kombucha drink glass works fine)
1. Take the spaghetti sauce jar and rinse with ACV. Rinse again with pure water.
2. Pour the red wheat berries into the jar and rinse with pure water. Fill the jar with pure water, and secure with a filter and rubber band. Let sit on the counter for 8 to 10 hours.
3. Pour out the water and rinse the berries. Replace the coffee filter (or get a fresh one, and secure with a rubber band. Invert the glass jar with the wheat berries and prop against your kitchen counter at a 45-degree angle. Cover the glass jar (except for the opening with the coffee filter) with the towel or cloth to shield from excess light.
4. Repeat the above rinsing step every 10 hours, and replace the jar on the counter in the inverted position, covered with the cloth or towel.
5. After 2 days, you will notice little tails coming from the wheat berries. Congrats, you've got baby sprouts! Love them and cherish them and feed them, and enroll them in your local montessori....no just kidding...
But what you do want to do, is rinse the sprouts one last time. fill the jar to the top with pure water (leaving about 1/4-inch space clearance), and secure the coffee filter with the rubber band for a covering. Place this jar with the water in it in a cabinet and forget about it for anywhere from 24 to 48 hours.
6. After the elapsed time, you will notice the water has become cloudy, bubbly, and broth-like. Bottle this liquid in a glass jar, and refrigerate. It’s rejuvelac!
I've kept rejuvelac good and bubbly for a week following this method, but I don't tend to keep it longer (mainly because I use it up that week.)
OTHER NOTES:
Warning: do not leave rejuvelac in the cabinet fermenting for more 48 hours; I’ve noticed mold growing when I tried fermenting a little longer.. hmm...then I ended up having to discard my batch.
1/2 jar of sprouted berries will produce about 2 batches of rejuvelac. then plant the sprouts in your kitchen garden (an old salad plastic tub with holes poked out for drainage, or a coffee can with said holes make a great grass garden holder). In about 10-14 days, you will have grass. You can juice this grass, to extract its vital living force and nutrients!
