1 (20-ounce) can crushed pineapple with juice
1 (21-ounce) can cherry pie filling
1 (18-ounce) package yellow cake mix (check ingredients some have animal ingredients)
1 cup vegan margarine, softened or melted
1 (7-ounce) package flaked coconut
1 cup nuts (macadamia, pecan, walnut, etc)
1. Preheat oven to 350 degrees. Spray a 13" x 9" baking dish with nonstick spray.
2. Pour crushed pineapple in bottom of dish. Layer with cherry pie filling. Sprinkle cake mix (dry) evenly over the top. Drizzle with vegan butter. Sprinkle with coconut and nuts.
3. Bake for 50 to 60 minutes, or until brown and bubbly.
