2 tablespoons olive oil
1/3 cup chopped red and/or green bell peppers
1/3 cup chopped carrots
1/4 cup chopped celery
1/4 cup chopped onion
8 ounces dry multi-colored bow-tie pasta, prepared according to package directions and cooled
1/3 cup avocado basil mayonnaise
2 tablespoons Italian dressing
1. In a pan, heat olive oil over medium heat. Add bell peppers, carrots, celery, and onion. Saute until soft, stirring occasionally.
2. In a bowl, stir together the vegetables, pasta, avocado basil mayonnaise, and Italian dressing.
