1 cup dried dates
3/4 cup almond butter
1 teaspoon vanilla extract (optional)
1) Soak the dates for 24 hours. Once soft, puree the dates in half of a cup of the soaking water using a blender or food processor. You should get a date paste.
2) Add the almond butter and vanilla to the date paste and mix with a blender/food processor. If your blender/food processor is not powerful enough, mix by hand. Store the almond-date spread in the fridge.
