4 red potatoes (fist-sized)
1 medium onion
4 cloves garlic
1/2 green pepper
2 to 3 tablespoon vegan margarine
Old Bay seasoning, smoked paprika, thyme and black pepper to taste
1) Scrub, poke and microwave the potatoes about 12 to 15 minutes on high. Meanwhile, chop up the onion, garlic and green pepper.
2) When the potatoes are done, let them cool a minute and cube them.
3) In a BIG skillet melt the margarine and throw in the veggies. Don't stir; sort of lift and flop so as to keep taters whole. Add seasonings to taste. Continue to cook, lift-and-flopping gently until the onions are translucent, or it smells too good and you can't wait anymore.

Also, if you have other veggies you can add them but I wasn't awake enough to remember to shred carrots or chop celery or anystuff.
