2 large onions (diced)
2 cloves garlic (crushed)
2 sticks of celery (diced)
1 large sweet potato (peeled and diced)
water
handful of fresh parsley (chopped)
half a handful of fresh basil (chopped)
1 bay leaf
1. Boil water in pot, and add sweet potatoes. While that's boiling, sauté the onion and celery for a minute or two in olive oil.
2. Add the garlic shortly afterwards. When the vegetables are soft, add water (I used the water from the sweet potatoes, but you may need more)
3. Add the herbs and sweet potato to veggies, and salt and pepper to taste. Simmer for about 5-10 minutes, stirring occasionally.
