1 (15 ounce) can black eyed peas, drained and washed
2 medium tomatoes, chopped
1 yellow pepper, chopped
4 green onions, chopped
1/2 cup salsa
1/2 teaspoon garlic powder
2 tablespoons cilantro, chopped
several dashes cayenne, to taste
salt and pepper, to taste
1. Pour beans into a bowl.
2. Add veggies and stir.
3. Add salsa and seasonings to taste, and stir. Chill and serve.
*Scoop up with corn chips or serve with Spanish rice for a complete and delicious meal!
