4 to 5 large carrots, shredded
1 sweet apple, chopped (I use Gala apples)
3 to 4 stalks celery, chopped
1/3 cup raisins
1/3 cup walnuts, chopped
1/2 cup vegan mayonnaise
1/4 cup nondairy milk
2 tablespoon vinegar
1 teaspoon vegan sweeter, or to taste
1/4 teaspoon garlic powder
1/2 teaspoon lemon pepper
1) Combine carrots, apple, celery, raisins and walnuts in a bowl.
2) In a second bowl, combine the rest of the ingredients and whisk together. Taste and alter spices to taste. Add more nondairy milk, if needed, to thin.
3) Combine dressing with salad ingredients. Eat and enjoy.
