1 tablespoons olive oil
2 onions, diced
1 head garlic,minced (~8 cloves)
4 cups water
2 heads broccoli, chopped (6 cups florets and stems)
2 small potatoes - small cubes
3 pinches salt
2 cups plain nondairy milk
1 to 2 pinches nutmeg, to taste
pinch black pepper
1. In a pot, heat 1 tablespoon oil over medium heat. Add onions and garlic; saute for a few minutes until onions are translucent.
2. Add water, broccoli, potatoes, and salt; increase to high heat and bring to a boil. Cover and lower heat; simmer for 20 minutes.
3. Test the broccoli and potatoes with fork. If easily pierced, remove from heat. Pour the contents into blender, or use hand blender until chunky or smooth and return to pot.
4. Add your non-dairy milk and stir. Add nutmeg, salt, and pepper; evenly mix.
