1 1/2 cups carrots, shredded
1/4 onion, chopped
1/4 green pepper, chopped
1/4 red pepper, chopped
1/4 orange pepper, chopped
1-1 1/2 cups quick cooking oats
sprinkle wheat flakes or wheat germ, optional
2 egg replacers (http://vegweb.com/index.php?topic=7678.0 [1])
1/2 teaspoon celery salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon red pepper flakes
1/4 teaspoon oregano
1/4 teaspoon thyme
1/8 teaspoon black pepper
oil, as needed
1. In food processor, add shredded carrots, onion and peppers. Finely chop. Pour into a bowl.
2. Add 1 cup oats and all remaining ingredients, except oil, mixing well. Add remaining oats, if needed for desired consistency.
3. Cover and place in the refrigerator 1-2 hours to let the flavors mesh together.
4. Make mixture into patties. Put a little oil in a nonstick pan, and fry patties 4 minutes, then gently flip over for an additional 4 minutes.
These freeze extremely well. Enjoy!
Source of recipe: I wrote this recipe after getting addicted to BackYard Veggie Burgers. I just didn't want to pay the price or have to go out in the middle of the night to get my veggie burger fix (LOL). Hope you enjoy them as much as I do.
