1/4 cup natural unbleached white or wheat flour
1/4 cup vegan sugar (i use evaporated cane juice)
1/8 teaspoon baking powder
pinch allspice
2 tablespoons coconut milk
1/2 teaspoon pure vanilla extract
nondairy milk, to taste (optional)
chopped pecans, to taste
1. In a microwave safe bowl (glass works best), combine dry ingredients (flour, sugar, baking powder, and allspice).
2. Mix in coconut milk and vanilla. The batter will be kinda thick, but it should be smooth. If it's too thick and a little dry, add a little nondairy milk to thin it a tad bit.
3. Once all mixed smooth out the top to make it somewhat flat and microwave for 2 minutes.
4. Cool for 10 minutes, then top with pecans! enjoy!
