2 cups ground, golden flax seed
1 cup whole wheat or white flour
1 cup white sugar, brown sugar, or all-natural sugar
1 cup raisins (golden, if you have them)
1/2 cup canola oil
1 1/2 cups applesauce (preferably unsweetened)
1/2 cup water
1 1/2 teaspoons baking soda
1/4 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon allspice
1/2 teaspoon salt
2 Ener-G egg replacers
1/2 cup walnuts or pecans, chopped
1. Preheat oven to 350 degrees F. Grease and flour a rectangular 13x9x2" pan. Beat all ingredients on low speed (if using kitchen aid), scraping bowl constantly.
2. Beat on high speed, scraping bowl occasionally, for about 3 minutes. Pour into pan (if beating by hand, just continue until it seems well-mixed).
3. Bake until it passes the toothpick test, about 60-65 minutes. Cool, and serve.
If you wish to not use Ener-G egg, feel free to experiment with the oil/applesauce to substitute. (I recommend making a double recipe; it's addictive. It also freezes well!)
Source of recipe: My mother altered a recipe from our much-loved "Betty Crocker's Cookbook" (which has some of the best dessert recipes ever, by the way). She substituted about 2 cups of flour for 2 cups of ground flax, but in my opinion it tastes a lot less healthy than it really is!
