1 handful cilantro, trimmed
1/4 medium cucumber, sliced into rounds
1 large or 2 small tomatoes, sliced into rounds
1/4 small red onion, sliced very thinly
6 olives
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 small clove garlic, pressed or grated
1/2 teaspoon minced fresh oregano
pinch salt and pepper
1/4 cup raw almonds, chopped
1. Divide the cilantro between 2 plates, making a bed for the other veggies. Arrange the cucumber and tomato on top of the cilantro.
2. Top with the red onion. Put 3 olives on top of each salad.
3. Whisk together the olive oil, vinegar, garlic, oregano, salt and pepper and drizzle over salads. Top each salad with almonds.
