Salad:
4 slices tempeh bacon
nonstick spray, as needed
2 cups green leaf lettuce, chopped
1/4 avocado, sliced
1 tomato, chopped in thick wedges (I use all organic) Vegan Ranch:
1/2 cup vegan mayonnaise
1/2 cup plain nondairy milk (I use almond)
1 tablespoon dried parsley flakes
pinch onion powder
pinch garlic powder
salt and pepper, to taste
1. Brown tempeh bacon in a skillet with nonstick spray.
2. Mix together ranch ingredients. Adjust the ratios to make it as thick or runny as you like.
3. Plate lettuce, and top with warm bacon, avocado, tomato, and some vegan ranch.
Source of recipe: I came up with this recipe because I had all the ingredients and wanted to avoid using bread.
