1 1/3 cups unbleached flour
2/3 cup sugar
1/2 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon pumpkin pie spice
1 cup nondairy milk
1/4 cup brandy
1/4 cup oil
1 1/2 teaspoons vanilla extract
1. Preheat oven to 350 degrees F and line a cupcake pan. Mix dry ingredients.
2. Add liquid ingredients. Fill cupcake liners 3/4 full.
3. Bake about 20 minutes, until a knife inserted in cupcake comes out clean.
