1 onion, diced
1 tablespoon olive or neutral vegetable oil
5-6 cups kale, torn or chopped into smallish pieces
4 cups veggie stock
2 medium brown potatoes, chopped (or 3 medium red)
1 vegan kielbasa sausage, chopped or sliced (I use Tofurky)
salt and black pepper, to taste
1/2 teaspoon oregano
1. Saute onion in oil until translucent. Add kale, stock, potatoes and"sausage, and bring to a boil.
2. Lower to a simmer and keep heat on low for about 30 minutes, give or take, until potatoes are tender and awesome. Season, to taste.
Yum!
This recipe is infinitely customizable. We went with a very simple soup because we don't let much get in the way of our kale, but white beans, mushrooms, or green onions would be great additions.
