1/2 cup peanut butter
1 teaspoon vanilla extract
1 banana, mashed
1/4 cup + 2 tablespoons sugar
1/2 cup nondairy milk
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1/4 cup ground flaxseeds
3/4 cup whole wheat flour, divided
1. Preheat oven to 350 degrees F and line muffin pan. Beat peanut butter, vanilla, banana, sugar, and milk together.
2. Add baking soda, powder and salt. Beat until mixed. Add flaxseeds, and beat until mixed. Add flour 1/4 cup at a time until all ingredients are well blended.
3. Spoon about 1/2 cup batter into each muffin liner. Bake 15-20 minutes, until knife inserted in muffin comes out clean.
