2 medium onions
2 1/2 cups mixed beans, soaked
1/2 cup dark brown sugar
1/2 cup maple syrup
1/4 cup Dijon mustard
1 teaspoon black pepper
4 cups warm water
1) Chop onions and place in the bottom of a crock pot. Add beans to crock and set aside.
2) In a large bowl, mix together the brown sugar, maple syrup, Dijon mustard, black pepper, and water so that the sugar is mostly dissolved. Gently add the liquid to the crock pot.
3) Cover and turn to the heat to high. Cook for 6 to 8 hours or until the beans are soft and completely cooked. Check on them and stir every 30 minutes to 1 hour.
Serve with fresh warm bread!
