10 ounces vegan chicken tenders (I use Gardein Chick'n Scallopini)
1 cup vegan chicken-style broth
1/2 teaspoon poultry seasoning
14 round vegan crackers, crushed (I use Ritz)
1/2 cup shredded vegan cheese (I use Daiya cheddar)
Salt and pepper, to taste
4 vegan hamburger buns
1) Defrost the vegan chicken in the microwave. Shred to make bite size pieces.
2) Heat a small sauce pan over medium heat. Add shredded vegan chicken, 1/4 cup of the broth, and poultry seasoning and cook for one minute. Add crackers and stir, adding broth as needed to make a thick mixture. Cook until heated through. Add the vegan cheese and stir to combine, adding broth if needed.
3) Season to taste with salt and pepper. Serve on buns.
