1 package tempeh

¼ cup onions

½ cup zucchini
·
1 broccoli stock
·
1/2 cup brown rice
·
2 tbs arrowroot starch
·
2 tbs balsamic vinegar
·
2 tbs olive oil
·
1 tbs dried basil
·
1 tbs dried oregano
·
2 tbs dried parsley
·
2 tbs cajun
·
1 tbs baking powder
·
Pinch of salt
·
1 e [1]gg substitute
·
½ cup vegan mayo
·
Cajun spice to taste
·
Paprika to taste

Cut tempeh into cubes and process in a food processor or mash with a potato masher.

In a large mixing bowl, mix all ingredients. Place in a casserole dish.
3.
Cook in the oven at 350 for about 20 minutes.
4.
Mix vegan mayo, Cajun and paprika to make sauce. Mix into mixture.
Can be formed into a patty shape for tempeh burgers as well.
