Lazy Kale
What you need:
1 medium sweet onion, chopped
1 tablespoon olive oil
1 bunch kale, stripped from the stems
1/2 cup veggie broth (I make my own and it salt free)
salt, to taste, optional
What you do:
1. In a deep dish pan, heat to medium-high, and add olive oil and onions. Cook for 3 minutes, or until just transparent.
2. Add kale and veggie broth and continue to cook until kale has wilted, about 3-5 minutes. Season with salt, if using.
Serve and enjoy. I like it with thyme seasoned brown rice and broad beans.
Source of recipe: The title says it all. I was making it for my 11 month girl. She loves it.

SO HOW'D IT GO?
This is a great, basic kale recipe. I did add 2 gloves garlic to mine, putting it in the oil after the onions had cooked for a minute. It was really delicious and everybody loved it!
