Oatmeal + Choc-Chip Cookies

What you need: 

1/2 cup vegan margarine
1/2 cup applesauce
1/2 cup white sugar
1/2 cup brown sugar
1 ripe mashed banana
2-3 teaspoons vanilla
1 3/4 cup flour
1 teaspoon baking powder
2 1/2 cups rolled oats
1/2 cup vegan chocolate chips

What you do: 

1. Preheat oven to 375 degrees F. Mix margarine, applesauce and both vegan sugars.
2. Add well-mashed banana and vanilla. Add dry ingredients bit by bit while continuing to mix.
3. Scoop little spoonfuls onto greased cookie sheet. Bake for 8-9 minutes, more for larger cookies.

SO HOW'D IT GO?

Terrific cookies! I didn't tell my sister it was vegan (she hates most of the ingredients in there) and got her to try them. She loved it!
They're cakey and chewy and definitely sweet. Very easy to whip up, which was perfect because I was feeling bored with my day, AND lazy. :)

This is the best oatmeal chocolate chip (AND BANANA) cookie recepie ever.

I lost it, but I found it again and they're in the oven right NOW! :)
