Taco Pizza with Blue Corn Crust
1 package or 2 1/4 teaspoon dry yeast
1 cup warm water
1 teaspoon sugar or whatever else you use for sweetening
1 teaspoon salt
about 1 tablespoon oil (optional)
1 1/4 cup whole wheat flour
1 1/2 cup blue cornmeal
about 3 1/2 cups black beans
3 tablespoons salsa
cilantro
juice of one lime
water
corn, scallions, tomatoes, black olives, etc.
For the crust: Dissolve yeast in warm water. Stir in vegan sugar, salt, oil, flour, and cornmeal. Beat vigorously and allow to set about five minutes. If its too sticky, add a little more whole wheat flour.
I use homemade refried black beans for my sauce, but you can use any type of bean sauce. To make the refried beans, put beans, salsa, cilantro, and lime juice in frying pan and mash together while stirring over medium heat. Add water as needed to get the consistency you desire.
Roll the dough out onto a baking stone or baking sheet, spread the beans fairly thick and top with corn, scallions, tomatoes, olives, and any other veggies you like. Can add vegan cheese substitute or nutritional yeast on top of this if you want, but its okay without it, too. Sprinkle with crushed red pepper and bake at 400 degrees for about 20 minutes or until crust is fairly crispy.
SO HOW'D IT GO?
This crust is good although it could maybe use a little seasoning. i made it with no oil and put it in a square stoneware pan & the crust went almost all the way up the sides of the pan for a deep dish style pizza. i topped it with a can of refried beans, diced tomatoes, yellow peppers, fresh spinach, frozen corn, zucchini, and vegan queso with tvp mixed in. at 20ish minutes the crust was nice and crispy and i topped it with salsa and avocado. it was very good & filling (this is definitely not a light fluffy crust - it's very dense & hearty)
Had to try this since it had no reviews (and has been listed since 2005). It looked interesting enough. I was unable to find blue corn meal but used regular and the crust turned out great. It rises a little bit and gets nice and crispy on the bottom. I used a can of refried beans mixed with about 1/4 cup salsa and added some cilantro and lime juice. Family did not like cilantro or lime. I used frozen roasted corn from Trader Joes, scallions, olives and tomatoes on top. I think I will keep trying to tweak this a bit since I really loved the crust so much. It would probably be good with sweet toppings too...hmmm...ideas are brewing!
