Vegetarian Sushi
What you need:
1 cup uncooked white rice
1/4 cup rice vinegar
1/4 cup sugar
2 teaspoon salt
nori seaweed, as needed
soy sauce, to taste
wasabi, to taste
What you do:
1. Cook the rice according to package directions. Mix vinegar, vegan sugar and salt in separate bowl.
2. Mix vinegar mixture into the cooked rice.
3. Wrap the rice with the nori. Mix soy sauce and wasabi, and use as dipping sauce.
You can also wrap up vegetables with the rice. Avocado, cooked asparagus, cucumber, thin carrot slices, and ginger taste good with this. These ingredients can all be found at an Asian food store.

does anybody have any tips for rolling sushi without a mat? help would be much appreciated. ;)
I do this all the time. I put plastic wrap under the nori, pile the rice on, put another sheet of plastic on top, press the rice around, flip, remove the plastic on the nori side, add the veggies, and roll like that, peeling away the plastic as needed. As you roll, press around on the roll to keep it tight and try to keep it even (it should work out ok if you distributed the rice evenly and your veggies are the same thickness throughout).

I just finished making this (my first venture into sushi making! ;) ), and they're awesome! I used basmati rice, avocado, carrot, red pepper, and cucumber (I didn't use a mat). I ran out of rice and had to use leftover rice (I mixed it with the vinegar and everything) and even those rolls were still good. ;D
I'm so proud of myself...this is the first time I've ever made sushi! And it turned out so nice too...
I wanted to make these like some sushi I had at a co-op, so I used the same ingredients and it tasted identical! Thank you for this recipe. :)
P.S. the ingredients I used were, some pre-marinated crumbled silken tofu, lightly sauteed (dry) with some teriyaki sauce, some shredded kale and carrot strips. Very tasty!
I also wrapped mine without a mat...they weren't completely perfect, but I think I did ok. Just very carefully take one end of the nori and overlap it around your filling and continue to roll until you get to the end (the sticky rice will adhere it together). If you spread your rice thinly enough, it shouldn't stick out the sides (like mine).
Mmm, sounds great. Can't wait to make it with cucumber.
See pictures... I made my sushi with steamed Tempeh that I mixed up with 1tsp of toasted sesame oil and 2 TBSP of Veganaise. I also used thinly sliced English cucumbers and avocado... Super yum yum!!! :D
Elize. You need to use a Japanese rice cause American rice is dry and doesn't stick well, according to someone I know who loves to make sushi. He sent me this link for more info on making sushi rice.

Me again - As for making sticky rice, you can add rice wine vinegar, sugar and salt - I don't bother with the latter two but adding vinegar, even a white balsamic, gives it stickiness. Give it a go - sushi is sooooo good! K :D
Elize - I guess you would press out the rice onto cling film, press sesame seeds on top of the rice, place another piece of cling film over that, turn over, take the cling film off the rice-only side, add your fillings and roll up remembering to take out the cling film as you roll - never tried it myself but have seen the girls on post punk kitchen on the net do sushi using cling film to put rice on the outside and inside of nori!
