Spinach and Bean Quesadillas

What you need: 

1 (10 ounce) box frozen chopped spinach, defrosted
1 (15 ounce) can fava beans
garlic, to taste
cumin, to taste
chili powder, to taste
salt and pepper, to taste
oil or cooking spray, as needed
1/2 cup diced roasted red peppers
1/4 cup salsa
2 cups shredded vegan cheese, divided
tortillas, to serve

What you do: 

1. Using blender, add spinach and half the beans with some of their liquid. Pulse until smooth, then add rest of beans.
2. Add in the garlic, cumin, chili powder, and salt and pepper all according to your taste. Pulse in blender briefly. Meanwhile, heat frying pan on medium high with your choice of oil.
3. Pour blender mixture into bowl and add peppers, salsa, and one cup of vegan cheese. Mix well. (you can even make this the night before if you like.)
4. Spread some mixture on 1/2 tortilla, and sprinkle extra cheese on top of mixture. Fold tortilla in half and cook a few minutes on each side until golden brown and piping hot. yum!'

These were SO delicious! The only changes I made was using fresh spinach and black beans. I will be making this again for sure!

Anyone tried it without the vegan cheese? The grocery stores in my area don't much in the vegan department (barely even have rice/soy/almond milk). If no, does anyone have any common item substitutions? Thanks

These were fantastic! I used real spinach and kidney beans because I had them available and it worked beautifully. I didn't add the water from the beans. This makes enough to feed a family and the quesadillas are very filling. Will be adding this to my recipe box for sure.

I used fresh spinacj for these and black beans, turned out great! I had a little too much filling for the amount of quasadillas, I used a clamshell container of spinach. We ate it with guacamole, it was yummy!

I used fresh spinach and black beans and a bit of avocado. Overwhelmingly good. This one will be repeated.

I made these a few days ago with Cannellini beans and fresh spinachl and they are now one of my favourite things to make. My husband loves them so much, he just ran out to buy everything we need to make them again tonight.

I've made these with fava beans and with black beans on a separate occasion.  I liked them both but I think I preferred the Fava beans.  I used fresh spinach and added some extra diced anaheim chilis in it too and it was really delicious.  My meat loving family enjoyed them as well.
