Spinach and Bean Quesadillas

What you need: 

1 (10 ounce) box frozen chopped spinach, defrosted
1 (15 ounce) can fava beans
garlic, to taste
cumin, to taste
chili powder, to taste
salt and pepper, to taste
oil or cooking spray, as needed
1/2 cup diced roasted red peppers
1/4 cup salsa
2 cups shredded vegan cheese, divided
tortillas, to serve

What you do: 

1. Using blender, add spinach and half the beans with some of their liquid. Pulse until smooth, then add rest of beans.
2. Add in the garlic, cumin, chili powder, and salt and pepper all according to your taste. Pulse in blender briefly. Meanwhile, heat frying pan on medium high with your choice of oil.
3. Pour blender mixture into bowl and add peppers, salsa, and one cup of vegan cheese. Mix well. (you can even make this the night before if you like.)
4. Spread some mixture on 1/2 tortilla, and sprinkle extra cheese on top of mixture. Fold tortilla in half and cook a few minutes on each side until golden brown and piping hot. yum!'

SO HOW'D IT GO?

These are so good. I made my own modifications-

I used canellini beans and fresh spinach and added in some green sauce. I've never used bell peppers in it, just because I didn't have any. They have gotten great reviews from omnivores and are one of my favorite things to make.

Very delicious! I'm impressed! I'm vegetarian so I used regular cheese and sour cream. Also I used fresh spinach and added fresh diced avocado.  Will be making this again for sure! So easy and satisfying !

So I am literally eating this dish as I'm typing this. This is my first vegan meal and I absolutely love it! I used black beans instead and opted out of the vegan cheese. I've been cutting dairy out of my diet for several months now and cheese, vegan or not, does not interest me. For a dip, I used vegan sour cream, half a mashed avocado, and seasoning to taste. It all turned out great! and I got 4 meals out of it!!My Quesadillas

This turned out great!! I used red kidney beans and added mushroom and avacado. This was yummy and very filling! Thanks for the recipe Smile

If I'm using dried fava beans, do I have to peel them? They have a brownish skin color.

This was delicious, and as everyone suggested, I opted for black beans instead of fava beans. I'm a big fan of spinach so I added a bit more spinach than suggested and it still turned out great. I didn't use nearly as much vegan cheese as suggested. I used about a 3/4 to 1 cup of vegan cheese and it was plenty cheesy. I would make it again.

This recipe was delicious!  I started my vegan adventure 7 weeks ago and am down 13 pounds and feel great.  I'll be coming back to this site again for more great ideas.

I made this over the weekend and it was amazing!!! Will def make again.

This was fantastic! I squeezed out the spinach and sauteed it in a little olive oil then added the cumin and chili. I did as others suggested and used black beans too and sun dried tomatoes. Blended the whole thing in my Magic Bullet and spread it on my tortillas. I used sliced avacado instead of vegan cheese, Perfectly creamy with the avacado, didn't miss the cheese at all. This was such a great recipe, will be using again and again.
