Vegan Penne Primavera w/ Alfredo Sauce

What you need: 

1/4 cup olive oil + extra for sauteing
2 tablespoons wheat flour (I use Kamut®)
1 cup plain nondairy milk (I use original Rice Dream)
3 tablespoons vegan parmesan cheese
1/2 teaspoon sea salt
1/2 teaspoon black pepper
12 broccoli florets, chopped
2 carrots, julienned
1 red bell pepper, julienned
2 (8-ounce) boxes penne pasta (I use DeBoles Rice penne), cooked according to package directions or al dente
1/2 teaspoon of crushed red pepper (optional)

What you do: 

1. Heat saucepan. Add oil, then flour and stir until slightly beige.
2. Stir in nondairy milk and parmesan cheese. Stir as mixture thickens. If it is too thick, add a little water. Add salt and pepper. Take off heat.
3. In saute pan, heat olive oil. Add brocolli, carrots, and bell pepper. Saute lightly.
4. Place pasta into bowls. Pour sauce over pasta and top with sauteed veggies. Sprinkle red pepper and more parmesan, if desired.

SO HOW'D IT GO?

My family liked this.  We are finding that changing up the "milks" used would be beneficial- soy milk for this was not exactly how I'd like it- next time I'll go with the mentioned rice or almond milk.  (Plus, I always add allspice/ or nutmeg to alfredo sauces)  Thanks!

this recipe is delicious! and very easy to put together! i also added in a couple tablespoons of nutritional yeast, minced garlic, capers, and smoked tempeh. i loved it!

Both I and my meat-eating parents really like this recipe!  For the primavera veggies, I added carrots, peas, mushrooms, onions and a bit of red pepper.  The only thing they asked for towards the end was a bit more salt, and the red crushed pepper really is necessary I think!

This was amazing.  I'd never had regular Alfredo sauce, so I didn't know what to expect, but the sauce was really good, creamy and cheesy perfection.  I piled on sauteed asparagus and portabella mushrooms instead of using the red peppers, and used plain old white flour, and this came out perfect.  My Italian-Pasta-Loving-Went-Veggie-For-Me guy absolutely loved it.  :)>>>  This is definitely a keeper!  Thanks for a great, easy recipe!

I love this recipe!!!  It's so easy to make!!!

For some reason I like to add sugar to the alfredo sauce.... I dunno why.  But it's yummy either way!!!  ;)b
