The first day of spring (also known as Spring Equinox) is next week on March 20, 2014. That means spring, and all its pretty flowers and fresh fruits and vegetables, is just around the corner. What better way to welcome spring than with a plate full of delicious spring rolls!

It's everyone's favorite/least favorite holiday. I can't think of a holiday that makes some people feel amazing and others feel like hiding in a corner until it's over. Actually, that's a lot of holidays, isn't it? Oh well. Whether you're stoked or scared, it only comes once a year and it'll be over before you know it! If you're totally dreading it, I propose this: Why not just make a delicious meal and celebrate love everywhere. Maybe that's slightly cheesy but it can't be a bad thing.

Thanksgiving is the best holiday of them all. It's got everything you need -- family and food. Seriously, what more could you ask for? Except maybe more pie? That's the only acceptable thing you could ask for.

Let's put on our eating pants and dive into our favorite Thanksgiving dishes.

What's more perfect than the most perfect nectarine? Maybe the most perfect peach? Maybe? Or a barrel full of perfectly ripe cherries? I don't know, they're all pretty perfect. Stone fruit is absolute heaven in summer—bursting with sweet, juicy flavor, it really is "nature's candy." And that's a term I hate, because my mom used to force fruit into me by trying to spin it as candy. Well, I was young and foolish, I didn't yet know that mom always knows best. I raise this perfect tangerine in her honor! Or, I raise the pit, because the rest of it's gone. Oops!

Here's some of my favorite recipes:

What is the meaning of life? Is there life on other planets? Why is brunch the best meal? These are questions we may never know the answers to. Okay, I'll take a guess on the brunch one. It's something that usually happens on weekends (yay!), after having slept in (yay!) and involves combining the best of the best from both breakfast and lunch (yay!). It's really just a genius meal and I want to meet the person who invented brunch and have their adorable, delicious babies. That sounded wrong. I can't help it. Brunch does crazy things to me!

Like most kids raised on the Standard American Diet (SAD is an appropriate acronym), I couldn't stand many vegetables. I was grossed out by avocado, eggplant, and the very worst of them all, tomatoes. Tomatoes were goopy, slimy things, just waiting to contaminate the rest of the food on my plate. However, as I got older and my tastebuds evolved, I started to try many foods I was terrified of as a kid. I soon discovered that avocados and eggplant were gifts from the heavens! But I'm going to be honest with you–I was still terrified of tomatoes.
