Breakfast
Tofu Scramble
Loved it! The best scramble I've had. The spice mix is great to have on hand, and I loved the addition of spinach, I haven't tried that before. (eldsjal)
Perfect Oatmeal
Buckwheat Pancakes
Jalapeño Corn Cakes
Buttermilk Biscuits
Nice! Not to different from bp biscuits, but a nice switch up all the same! (dannibazaar)
Rosemary Home Fries
Cherry Almond Granola
Zucchini Muffins
Raisin Bran Muffins
Very Berry Muffins
Appetizers
Roasted Red Pepper Hummus
Yummy. I love roasted red pepper hummus, and I liked the kick of curry powder. And not too much oil or tahini, that's a good thing in my opinion. (eldsjal)
Roasted Eggplant and Garlic Hummus
Spinach Chickpea Dip
Lettuce Wraps
Polenta and Eggplant Napoleons
Veggie Wontons with Ginger Miso Dipping Sauce
Baked Samosas with Cilantro Mint Chutney
Soups
Potato Corn Chowdah
Tortilla Soup
Black Bean Soup
Miso Soup with Edamame
Black Eyed Pea Soup
Curried Carrot Ginger Soup
Mom's Lentil Soup
Definetely one of my favorite lentil soups. It's divine! And it tastes even better as leftovers. So good. (eldsjal)
Salads
Daily Green Salads
Antipasto Salad
Taco Salad
Made it for a potluck lunch and it was really good. I used black beans instead of kidney beans and canned diced tomatoes instead of fresh because that is what I had at home. I really enjoyed it and could eat it for lunch by myself. (biodancer)
Minty Summer Fruit Salad
Barley and Avocado Salad
Texas Caviar
Goddess Pasta Salad
Made it for a bbq this weekend and it was a big hit. I didn't add the cucumbers because my mom doesn't like them. I thought it was great and it makes a ton to feed a lot of people. The only problem was that it dried up a bit too quickly. I made it in the morning and served it in the afternoon and by that time the pasta had soaked up a lot of the dressing. It still tasted great and got good reviews from everyone. Next time I may double the dressing or serve it right away. (biodancer)
A bit of a disappointment. I've heard so many great things about this recipe, but it didn't live up to my expectations. I don't think it tasted very much at all. But I'll eat it until it goes bad (the rest of the week that is, it makes a lot). (eldsjal)
Couscous Chickpea Salad
Quinoa Tabouli
Carrot Salad with Herb Lime Dressing
Wild Rice Salad
Sauces, Salsas and Toppings
Sundried Tomato Cream Sauce
Ratatouille Pasta Sauce
Marinara
Béchamel Sauce
Used it in the butternut squash lasagna. It was perfect. Not too much margarine, but still creamy and buttery. I'm gonna try the herbed variation soon and pour it over pasta. (eldsjal)
Pesto
Mexican Pesto
Lemon Artichoke Pesto
Mushroom Gravy
Almond Milk Gravy
So good. Great on the buttermilk biscuits. (dannibazaar)
Lemon Tahini Dressing
Too bitter and sour. Could use some agave syrup. (eldsjal)
Creamy Pepita Dressing
Tangy Sour Cream
My go-to homemade sour cream. It gets its tang from lime juice, and while some people may think it tastes too much lime, I love it. It's so good with the tamale pie! (eldsjal)
Nacho Sauce
Your ordinary nooch sauce. It's easy and doesn't disappoint. I use it all the time. (eldsjal)
Guacamole
Mango Salsa
Raw Corn Salsa
Birthday Salsa
Chipotle Ranch Sandwich Spread
Tapenade
Sunflower Feta
Vegan Parmesan
(I finally found brown rice flour). Not bad. I used a little on Vcon's Penne Vodka. I like it just by itself. (biodancer)
I use chickpea flour instead of brown rice flour, and the last time I made it I added some white miso which gave it an even cheesier taste. A staple! (eldsjal)
Sides
Simply Sweet Potatoes
Braised Cauliflower
Lemon Pepper Chard
Collard Greens
Sesame Green Beans
Pickled Onions
Creamy Herbed Polenta
Spiced Applesauce
Easy to make, but way too sweet. If I make it again I would use way less sugar, probably about half the amount. (disneyfav)
Lemon Rice
Green wa
Not a favorite. I love quinoa, but this turned out mushy and bland. I might make another variation of it sometime in the future though. (eldsjal)
Roasted Garlic Mashed Potatoes
Stuffed Twice Baked Potatoes
Roasted Roots
Refried Black Beans
Dirrrty Rice and Beans
Mains
Simple Chicken Style Seitan
Mustard Crusted Seitan
Crispy Beer Battered Seitan
Tofu Marsala
Baked Mac and Cheese
Spinach Lasagna
Butternut Squash Lasagna
This was heavenly! When I made it, I was certain I wouldn't like it. I thought it would be bland and I usually hate sage, which the recipe calls for. But I followed the recipe exactly, except using dried sage instead of fresh and adding some nooch to the tofu, and it turned out to be one of the tastiest lasagnas I've ever had! (eldsjal)
Penne Alfredo
Pasta E Fagioli
Kasha Varnishkes
Grilled Portabellos
Asparagus with Spinach and Artichoke Cream Sauce
Thai Bowl
Sloppy Joannas
So much better than Snobby Joes from Vcon in my opinion. I'm not a huge fan of TVP but I liked this enough to have two sandwiches last night for dinner and bring the rest in for lunch today! (biodancer)
I actually like the Snobby Joes better than this... It wasn't bad, but I'm so used to the Snobby Joes. I think I'll stick to them. (eldsjal)
Chana Masala
Cajun Spiced Tofu
White Beans and Kale
i didn't have white beans so i used canned kidney beans, which seemed just fine. then at the end i added a handful of cherry tomatoes. i thought it was really good.. at first i was put off by the lack of flavors she added, but since i managed not to burn the shallots/garlic for once, it turned out just perfect. the idea of rubbing the lemon juice into the kale before you put it into the pan (i usually add my lemon juice later) was genius. it didn't make it too lemony, but there was a nice hint. so far, so good. most of the food seems like comfort food though... but i'm ok with that since fall's here and that's my comfort food season. (allularpunk)
Black Bean and Sweet Potato Flautas
Tamale Pie
I've made this twice so far, and the first time I wasn't impressed at all. But then I made the mistake to add extra veggies so it turned out too liquid-y, and I also used shredded soy cheese. The second time, I followed the recipe more carefully and used the nacho sauce instead of soy cheese. So much better! Especially with guacamole and tangy sour cream. Yum! (eldsjal)
Better than Basic Veggie Chili
Northwest Meets Southwest Chili
AWESOME! Loved it! (finnegan)
Sweet Things
Aloha Bread
Cherry Compote
Soft Oatmeal Cookies
Gluten Free Chocolate Chip Bars
Mojito Pie
Lemon Almond Cake
Really good, but I like it better without the glaze, which made it too sweet for me. I chopped up strawberries and added them to the batter, and that made it even better. (disneyfav)
Spice Cake
This is very delicious. Not too high in fat, either. I've made it twice now. Both at home and at the yoga studio, everyone loved this. (dannibazaar)
