Super simple cookbooks?

Hey, everyone. This year for Christmas, I was thinking of getting my dad a vegan cookbook. About a year ago, he had some heart problems and is now very much into making healthy foods and staying away from dairy and eggs. The only issue is, until a couple years ago, the only thing he could really manage making were sandwiches and macaroni & cheese from a box (and even that was chancy).
Anyone have suggestions of a vegan cookbook with really straightforward recipes?
I was looking at Everyday Happy Herbivore (which I'm kind of interested in myself!), Quick-Fix Vegan, & 4-Ingredient Vegan. Thoughts on those or other suggestions?

Peas and Thank You and Appetite for Reduction are both good cookbooks that don't require a lot of ingredients and/or fussy steps. I use them both frequently when I need a quick meal.

I love AFR, but I don't know about it for a beginner beginner cook (per andini's description). It might be a little overwhelming? I don't have experience with those other books mentioned, but 4 ingredient vegan sounds simple.
eta: to clarify, I don't feel this way! I thank anyone can learn to cook with some reading and practice, but I wouldn't want him to feel intimidated, and give up.
Quick Fix Vegetarian is pretty straight forward and she wrote a new one this year "Quick Fix Vegan".
Supermarket Vegan is pretty straightforward as well and doesn't use the more obscure ingredients.
I dusted off my copy of Simply Vegan and it looks pretty cut and dry as well.

Good choice. I've made a lot of dishes from this cookbook this compared to some others I have. (As you might have noticed in the cookbook thread). I hope he enjoys it.
