Ohai guys, I was planning on making my Nannie the blackstrap gingersnaps from VCIYCJ but left the book back home and can't find the recipe online. Can someone be a hero/ine and type it out for me? Loving forever would ensue.
(She's recovering well, by the way, and almost howled the place down when I said there were no ginger cookies!)
In a bowl, beat together:
3/4 cup granulated sugar
1/3 cup blackstrap molasses
1/2 cup vegetable oil
3 tablespoons non-dairy milk
1/2 teaspoon vanilla extract
In a separate bowl, sift together:
1-3/4 cups all-purpose flour (or half ap and half whole wheat)
3 rounded teaspoons ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon baking soda
1/2 teaspoon salt
Stir the dry mixture into the wet mixture to form a firm dough.
Scoop the dough by the tablespoon, moisten hands, and roll into balls. Place dough balls about 3 inches apart on greased baking sheets and flatten slightly.
Bake at 350 F for 12 minutes, or until edges start to brown. Remove from oven and let cookies rest on baking sheet for 5 minutes before transferring to cooling racks.
I don't have the recipe, Cat, but I am sooo chuffed your Nannie is on the mend!! Ginger is good for your circulation, so I hope you get the recipe soon! Get wombling, girl! :)>>>
11 mins between asking and receiving! Man, I love VW!! :) HH rocks!
Thanks, HH! Cookie production starts tomorrow.
Also glad she's on the mend, I'm hoping that these will be a little more enticing than hospital food - bleugh!
