Please help me use up Ingredient X.

Ahoy folks! I thought I'd start a thread where you can ask for recipes and advice on how to use up an ingredient (e.g. a vegetable, fruit, grain, bean, etc.) of which you have lots and lots and lots; or which is new to you and you don't know where to start with it.
I'll go first. :P I have many, many tasty carrots from the farmers' market which I need to use before they go soft.
Recipes, please.
I know, I know, carrots - simple - should be a no-brainer... but I was not fond of them for a long time, simply because I'd never known anything but raw or steamed carrots with very little flavour. I like to do INTERESTING things with them. They're so adaptable! Gimme your adaptations! :D

Curry
Hot and sour soup
Trail Mix (Dried fruit and nuts)
Muffins (Add some dried fruit and nuts)
If you had some tofu or seitan you could use up some of your extra sauces
The "chorizo" with added veggies would make an awesome burrito filling, maybe even add some rice or lentils
Also what the hell do you use rose water for?
there were a couple of recipes i used it for (rosewater cookies, rosewater cupcakes, also i think the almond drink from Indian Vegan Kitchen). It's pretty much 3/4 of the bottle, though, so I'm unlikely to use it up... It tastes like roses =)
in fact, I do have some meaty stuff. I still have some "ham," plus beef-flavored TVP. Most interesting...
Yeah, I might just eat the fruit/nuts as trail mix, or make some of the sunflower seeds into sunflower butter to eat with the jams.

You definitely have suffucient stuff to make LucidAnne's fantastic lentil salad - maybe with additional beans added in for good measure and coz you've got them.
Anyway....my ingredient is LEMONS!! I got given about 7 home grown lemons yesterday of varying sizes. What to use them for? Hmmm, no idea.
I don't have any cake tins, or any cupcake tins so cake is out. I don't have any suitable baking pan/tin for lemon squares...which I am totally gutted about as they have been on my list of things to make for ages :(
So any ideas?
Rosewater can also be used as a calming infusion. Indeed you could sweeten it and warm it up and drink it just like that. But if it's concentrated as the bottled stuff tends to be, you could cut it like 1/3 rw to 2/3 regular water. I have used it in some Indian/Iranian dishes.
Shell--lemon curd? No, that has eggs in it. Bummer.
I throw lemon juice in tons of things. You could do anything with avocados, pesto, Asian style sauces with garlic, ginger, soy sauce, agave..add lemon juice..even zest. Mexican things with beans..lemon juice and zest. You could make lemonade? or other drinks.
agreed with shea on the lemons. also, you could make a vinaigrette with lemon + olive oil + herbs, for salad or potato salad.

Lemon poppyseed cookies (use your favorite shortbread recipe, add some lemon zest and poppyseeds to it. MAGICAL!)

I always squeeze lemons and freeze the juice in cubes so that I can use them for whatever recipe I want later.
like AC, I use a bit of lemon juice in lots of things, but I can never seem to think of anything to use lots for when I have an abundance of lemons, so I find it handy to have a supply in the freezer for later.
I use lemons an several bean dishes. Off the top of my head:
hummus
lemony lentil soup from this site
chana masala
Quintess's creamy adzuki beans, and black eyed peas with kale
Serve drinks with lemon wedges (soda water, iced tea, gin & tonic, etc)
Salad dressings
Pasta and veggies with lemon juice and fresh cracked pepper
Make crepes or pancakes, sprinkle with sugar, and squeeze a lemon wedge over it

I don't think I can get hold of watermelon at the moment otherwise I really would investigate the fucking watermelon lemonade.
I hadn't thought of lemonade, so may investigate that. N likes the idea of sorbet, so I'm gonna look into that....but not sure how to make it. Any ideas?
