Please help me use up Ingredient X.

Ahoy folks! I thought I'd start a thread where you can ask for recipes and advice on how to use up an ingredient (e.g. a vegetable, fruit, grain, bean, etc.) of which you have lots and lots and lots; or which is new to you and you don't know where to start with it.
I'll go first. :P I have many, many tasty carrots from the farmers' market which I need to use before they go soft.
Recipes, please.
I know, I know, carrots - simple - should be a no-brainer... but I was not fond of them for a long time, simply because I'd never known anything but raw or steamed carrots with very little flavour. I like to do INTERESTING things with them. They're so adaptable! Gimme your adaptations! :D

Make a sandwich and grill it exactly like a grilled cheese.
I like to slice avacoda, tomato and onions and cook it like a grilled cheese in Earth Balance. So good.
Eat it with a spoon.
Second the grilled avocado sandwich and salad topping ideas. I like putting cubes of avocado on homemade taco salads.
I have a small ton of sesame seeds. What can I do? I think most of it will get turned into homemade tahini, but anything else?

Toss them into fruit salad, particularly if they are already toasted. They add a tiny bit of crunch and flavour.
I like to sprinkle them on rice, or salad...anything really. Or add a handful to rice when you're cooking it. Stir them in when the water starts to be absorbed but it isn't thick yet.

Toast them. If you don't already know: rinse sesame seeds in a mesh strainer. Shake out excess moisture and toss into a hot pan. Stir continuously as seeds start to dry, then brown and a little puffy. Do this until there is a good fragrance coming off the seeds. Transfer to a bowl and stir in a dash of tamari or shoyu. Garnish on salads and whatnot.

Wakame. I've got about four cups of it, which seems to be an awful lot. I've put a little in miso soup but there's still an awful lot of it. If I blitzed it in the spice grinder, would it taste fishy like kelp powder to make "tuna" salad?

A Japanese wakame salad immediately comes to mind.

Jam. It's good for coughs etc. if you mix it with brandy and warm it up when needed. Or syrup, for the same purpose. You can make your own and bottle it.

cordial - boil up with sugar and a little water perhaps to make a syrup, strain out any pips, skins etc? I love elderflower cordial, am guessing the berries would taste similar
see apparently the berries require different recipes to the flowers. IDK, that's what my neighbour told me.

yeah, I thought of that amy, seeing how I have a smoothie every day for breakfast but I kinda want to do something more, IDK, 'special' with them.
I'm thinking jam at the moment. A woman at work is going to check her cookbooks at home for recipes so I'll see what she comes back with.

that sounds genius! Can the berries be eaten fresh?
You can freeze them until you have the recipe and time to make the jam. I can look through my Sloane Ranger cookbook (Rosemary Hume) to find a recipe if you need one.
you could cook them down too with some sugar if needed to make a topping for "cheesecake" that's what i did with the blueberry, raspberry, elderberry frozen mix i got from costco... it was sooooo good!
