Please help me use up Ingredient X.

Ahoy folks! I thought I'd start a thread where you can ask for recipes and advice on how to use up an ingredient (e.g. a vegetable, fruit, grain, bean, etc.) of which you have lots and lots and lots; or which is new to you and you don't know where to start with it.
I'll go first. :P I have many, many tasty carrots from the farmers' market which I need to use before they go soft.
Recipes, please.
I know, I know, carrots - simple - should be a no-brainer... but I was not fond of them for a long time, simply because I'd never known anything but raw or steamed carrots with very little flavour. I like to do INTERESTING things with them. They're so adaptable! Gimme your adaptations! :D
Shell, the ones in the can are Chipotle chiles, not ancho. Anchos have a great flavor but are mild. I like the heat in the chipotles and can eat one of those little cans in one sitting (around 10 peppers). Go with chipotles. The smokey flavor is the best in the adobo sauce!

Here in Spain (and we had it first!) Adobo means a marinade of vinegar, thyme or oregano, garlic and paprika. Which if you've got chilis they would be that element. It's red and tart and spicey. So if you do the thyme-garlic-vinegar for your chilis that would be it.
I have fresh curry seasonings and I have no idea what to do with them and I was told they will turn hard within the next 2 weeks if I don't use them???

chipotles are smoked jalapeno peppers... you don't mean use fresh ones as a sub right?! i don't think that would work
are the chillis in those jars of 'chipotle in adobo' dried?
I think I always assumed they would be fresh...

so, aml - can I just toast some dried chilis for this? I am so confused. Maybe I should just bite the bullet and buy a teeny tiny can for a gazillion dollars so at least I can see what they're like.
i can send you both cans as they are like less than $2 here! i believe they must be the dried... there is no such thing as a fresh chipotle pepper as far as i know... i dunno wait to hear what sb and mdv say cause i wanna make my own too!!!

Chipotle = a smoked, dried jalapeno.
To the NZ VWers: http://www.fireworksfoods.com.au/ ships to NZ. Shipping is a bit pricey, but you can get I think 6 bags of dried chiles for the same shipping price as 1 bag. They also sell canned chipotles in adobo (as well as lots of other Mexican ingredients, hot sauces, chile seeds, etc), but obviously heavy stuff is more expensive to ship. As a former Arizonan living in Australia (aka the land of really really crap Mexican food), this website saved my life. :)
Chipotle peppers are always dried. You can find them in almost any latin market for dirt cheap. Don't know about the availability in NZ, though. Do not make peppers in adobo with fresh chiles. It will not work.

I love the smokey flavor of chipotles. They really go a long way, taking the adobo sauce to the next level! Well worth the price of shipping to NZ, I'm sure!!!! Split the cost with several NZers and enjoy chipotles in adobo sauce for years to come!

Shell and I have both seen the little pre-made chipotles in adobo but they're crazy expensive for a tiny amount. If we get our hands on some dried chipotles and make the sauce ourselves, we'll be set, for a fraction of the cost : )

I will investigate chipotles further before my visit to you, oww. Maybe the online store where I saw half a kilo of achiote seeds have different types of dried chili. Hmmm, I 'll think about it.

a little can of the stuff goes a LONG WAY for me and i like spicy stuff! a can maybe has 10 peppers and sauce... i usually use about 2 in recipes... maybe worth the investment?
I think that you should strongly hint about it in the next package exchange, haha.
approx 30lbs of crushed pineapple taking up my whole freezer in a huge box. i will can it if it comes down to it, and the fiance is planning on making some fruit leather... but what else could i do???
