Please help me use up Ingredient X.

Ahoy folks! I thought I'd start a thread where you can ask for recipes and advice on how to use up an ingredient (e.g. a vegetable, fruit, grain, bean, etc.) of which you have lots and lots and lots; or which is new to you and you don't know where to start with it.
I'll go first. :P I have many, many tasty carrots from the farmers' market which I need to use before they go soft.
Recipes, please.
I know, I know, carrots - simple - should be a no-brainer... but I was not fond of them for a long time, simply because I'd never known anything but raw or steamed carrots with very little flavour. I like to do INTERESTING things with them. They're so adaptable! Gimme your adaptations! :D

Thanks for the suggestion......wanted to use up some plain soy yogurt and I happened to have some mint leftover. It's chilling in the fridge now review to follow but it's going to be tasty I can tell.

Chia seeds are good in a smoothie... not really detectable, and nutritious.

Chia seeds are good for those (like myself) who want some omega-3s but think flax seeds taste like butt. :P
I can't fathom tarragon... I've heard it goes best with things I strongly dislike and/or which aren't vegan - fish, eggs, cheese and mushrooms.
the only fresh herbs i purchase are cilantro and parsley, otherwise they are sooooo expensive! i always skip recipes with fresh herbs :( wish i could help

Tarragon is a new to me herb and while I don't like licorice, I actually like tarragon. I found it pairs really well with tomato and white beans.
OK, so what does one do with allspice? I have some whole spice and don't really know what it goes in. It used to be impossible to get here, so no one uses it in Spanish cooking. They call it "Jamaica pepper."

ya jamican food lol... i know VWAV's Ethepoian Seitan uses allspice, so maybe Etheopian food too?

There are a lot of recipes using it on here. It seems that it's also used in a lot of pumpkin/carrot desserts as well.
Allspice is just one of those spices that comes up every now and then for me and it's a good idea just to have some on hand. Some Arab influenced dishes use it like Moroccan.
tarragon: ASPARAGUS
allspice: carribean/jamaican/african curries.
OMGOMG allspice is one of my favorite spices! crack/grind it and sprinkle it on squash that you're baking, root veggies you are roasting, or apple cider you are heating up. or COOKIES.
leave it whole and put it in your cheesecloth bundle/tea ball with your peppercorns in stew, or baked beans.
