Help With Vegan Diet

Hi :) I'm a mostly vegan-vegetarian. I'm having some issues with headaches. I'm pretty sure it's my diet. I don't like seitan, I'm at a loss at what to do with tofu and I eat alot of chilli and rice and beans. I work out every other day for my health. I'm having trouble with headaches, dragginess, and just feeling plain BLAH. :-\ Can anyone help me with some food/snack ideas? I mean, I know there are TONS of recipes here, but I'm on a very tight budget and get overwhelmed sometimes! lol Help, please! :D
maybe your iron is low. Try eating food rich in iron, like your dark leafy greens. Or even iron pills. You dont want to be anemic, trust me!

second of all, i agree about the iron. i'm predipsosed to anemia since my mom has it and there was one point that my iron got really low and i felt just like you described. but once i started making sure i got all the iron i needed, i felt fantastic. and do you take b12 supplements? if not, do itttttt. they're SUPER DUPER important.

Are you eating a whole foods diet, like incorporating lots of fruits and veggies into your daily diet? Also, since you're working out, you need to make sure you are eating enough calories, which can be harder than you might think. Think of a humongous bowl of spinach--there might only be 30 calories in that bowl! For calorie-rich, healthy foods incorporate some nuts and nut butter and avocados into your diet. Hope you find something that works for you.
Wow! Great ideas! Thanks, everyone. :) I eat lots of fruit. I'll go through two bunches of bananas, half a bag of grapefruits and two boxes of strawberries a week. Guess I should just eat more veggies. Should I steam them or are there some cool ways and flavors to cook them?
i love love love curries, so i am for that 100%. you can also do stir fries, soups, burritos, make like a "cheesy" sauce, or any other kind of sauce, ummm casseroles(? ive never made one), just throw a whole bunch of jnk together and see if it works! haha
Sweet! Thanks, Allison!! I just bought tofu and spinach! I think I'll make spinach salads or some kinda pasta with it...and the tofu I'm marinating in a little soy sauce, coating in cornmeal, and making a stir-fry with a buncha veggies! :D THANKS FOR ALL THE IDEAS !
I like to grill veggies--either on the George Foreman grill or on a grill pan on the stovetop. It really concentrates the flavor, then just some EB and salt and I'm good to go.
I also like to roast veggies (think root: sweet potato, potato, turnip, beets, or just about anything else!) for the same concentration of flavors. Some olive oil and garlic and you've got a fantastic side dish.

You can always add oil to make it non-fat, but her recipes are divine!
