I love living in the strawberry-producing capital of Europe in spring...the strawberries and melons are coming on hard and fast now, after a cold start. We have a melon rather like your honeydew, which here is called Galia. I've always enjoyed bits of melon and our lush strawberries mixed together in a cold dessert-salad, but now I have learned a new trick...squeeze a little lime-juice over all. Absolutely lush! The lime isn't as acid as lemon juice and just adds something to the combination of flavours that was lacking. Perfection!
