wheat free-yogaferret? or anyone else?
Hi!
I am having friends over and the guy is trying to start a wheat free diet. I guess he had a perforated colon (yuck!) and someone recommended it. Anyway, I am making some desserts, and might even try for dinner.
Can you eat brown rice syrup? I know rice can be contaminated sometimes, right? We have a great cookie recipe that uses it.
Any suggestions on a dessert I could make? If I do dinner, it will probably be a stir fry (general tsos?).I would like the foods to be vegan, so my family will be accommodated as well. I tried shiratake noodles tonite and didn't like them very well.
His wife seems really overwhelmed and worried that it will be so hard to do this diet. I was like, it won't be that bad! I guess because I am used to avoided certain ingredients it doesn't seem that big of a deal to me. She was complaining how wheat was in ketchup, soy sauce, etc....I recommended tamari, and I don't think my organic ketchup has it?
He is just going on the advice of a friend I guess. I think I might recommend The China Study and see what they think of that. Maybe cutting out animal products will make more of a difference.
Sorry to go off topic.....basically, I need ideas for what to make, especially desserts!!
thank you!
I have a few celiac friends and rice and cornstarch are some of their gluten-free staples.

Brown rice syrup?
Syrups usually contain something other than their main ingredient. I would avoid it and stick with normal things unless you know for sure. I can't find it is either safe or unsafe in my one single wheat-free cookbook.
You can tell his wife that yes, at first, it is overwhelming, but you'll eventually get used to what you can and can't eat. In Japan, rice is the staple food so IT is in everything. In AMerica, wheat is the staple, so it is hidden in EVERYTHING. Welcome to the world of No more eating out or prepared frozen foods. :P
I make a lot of Indian foods so I'm pretty safe all the time. And it's also why I only have one wheat-free specific cookbook. ;) Not too many curry and related recipes here, but here are a few from myrecipe box.

I also recommend an Indian rice pudding as it would fit the meal. Make sure you cook with Jasmine rice tho. Much more fragrant.
I've never NOT editted a recipe especially these on vegweb. These recipes are in the raw without the adjustments I made to make them tastier. IF you pick any of these let me know and I'll post what I did different as wheat flour is very hard to replicate and requires changes in the recipe to accomodate for flavor and texture.
Also, this is my standard flour replacer:

Good luck and keep us posted. :)
