Is EDTA safe?

I had heard years ago that it wasn't so I've been avoiding it but I'd like to check back in on that. And what is it?

Also, where can i find a complete list of ingerdients that i cannot have? My resources aren't as good as i wish they were. -_-  lol

ps - unrelated but i love being a vegetarian but man do i find it difficult to find good things to eat. I can't find most of the ingerdients mentioned on this site either. I love nowhere near a vegan shop. Most people don't. Where can i find vegan mayonnaise, sugar/sugar substitutes...there was more but it's not coming to me right now. Ahhh eggs. I need replacements. And butter/margarine.

edta is a food preservative and chelator. It's cytotoxic and genotoxic, but it's all about how much you have to have to get the toxic effects... apparently it has pretty low toxicity by ingestion, and is a mild irritant by inhalation or skin exposure.
The most common measure of relative toxicity (by ingestion) is the LD50 (sad for us, but it's what's used), and for EDTA it's 2000mg/kg. If you weigh 70 kg (154 lb) this means you'd have to ingest 140 g (5 oz) of pure, dry EDTA to die (or at least, that's theoretically how much is needed to kill half the population of 154-lb people who ingested it). I wouldn't really worry about it accumulating in the system, as the point of the chelator is that it takes metals out of the system (through the urine), and in fact is used for that purpose for metallic poisoning.

it's on food labels as EDTA. The full name would be too long, I think.

I'm sure it's not in natural-type foods, as it's an artificial preservative.

again lol  where does it come from/ is it made from?

And eatgreens, it's listed on food in different forms, i dont know them all but i know theres tetrasodium EDTA and disodium EDTA it stands for ethylene diamine tetra acetic acid. I really don't know much about it, that's why im asking. But we shall both learn from this, eh? : )

Sorry I'm like a month late on this, but, i eat vegetables, I'm in NJ too! what part are you from? I'm surprised you have that much trouble finding vegan things. What grocery stores are near you? A Whole Foods or Wegmans would definetly carry vegan things, but I've gotten tofu, meat subs & vegan mayo at acme & shoprite too. Sometimes you need to check the "organic & natural foods" section.
