Valentine's Dinner Menu

I tried to search to see if there was already a thread like this...

What is everyone's Valentine's Dinner Menu? My husband and I started a tradition long ago of packing a picnic instead of going to restaurants on this crazy busy consumer holiday. Tonight we have to be home for dinner for a certain reason, but then we are packing a dessert picnic: dark chocolate covered strawberries  :).

But that's as far as I got, I haven't decided on the dinner menu. Something simple, not expensive but fun. I am newly trialling a vegan diet and my husband is not vegan but mostly vegetarian...so it has to impress his cheese loving self haha.

I made a big veggie lasagna with multiple layers-homemade mushroom marinara, pesto, eggplant, spinach, mixture of marinated artichokes, green olives, black olives, sundried tomatoes, and roasted red peppers, roasted garlic cloves, and daiya on top! Delish. Also had a salad with mixed greens, croutons, and Italian dressing. Chocolate chip cookies and chocolate ice cream for dessert.

ooo that lasagna sounds awesome, and I haven't had chocolate covered strawberries in SO long. yum!

we made homemade ravioli with tofu ricotta and portobello mushroom filling. served with organic tomato sauce, green salad, and garlic bread.  dinner was followed immediately by a severe food coma!

I made stuffed shells (spinach, mushroom & tofu-ricotta) with salad, garlic bread, and wine.  I used the manicotti recipe from Ultimate Uncheese Cookbook, but I had to use shells, because the store didn't have any manicotti.  ???  I might do it with shells from now on, because they're easier to fill (and come with less packaging).

That lasagna does sound amazing, AC!

I ended up doing a super simple dinner: baked tofu saag samosas (just tofu saag wrapped in a ww tortilla, brushed with oil and baked 10 mins) with mango chutney-tomato dipping sauce. Then dark chocolate covered strawberries, which weren't as good as I hoped since strawberries aren't in season hehe. But we had a great Valentine's Day none-the-less.

Oh, and it was topped off by my husband saying as soon as his supply of dairy products and eggs run out he is going to try going vegan with me for a while  :)>>> I was shocked/surprised (since had been so anti) but of course thrilled. So romantic.

We didn't get home until almost 8 o'clock and I was so tired, so I just made beans and rice and no dessert! how sad does that sound?

The picnic idea sounds awesome. I would never go to a restaurant on Valentine's Day. It just doesn't seem romantic to be around so many other people.

My BF made us vegan crepes for brunch and I made chocolate truffles for dessert. Yum!
