Peanut butter and banana sandwich!
I like to mix frozen corn, peas and broccoli & heat them in a pan with some Earth Balance. Once everything is at least warm, I start adding some garlic powder, some pepper, and as much nutritional yeast as the liquid will take before it becomes a thick, cheesy, buttery sauce. Sometimes I add some tomato sauce.
Keep in mind that I work at an independent natural/health foods store, so I get a discount on food and there's always a free ¼# or so of the nutritional yeast left over when we bag it. Guess who takes that home! ;D
I love having soup for a cheap lunch. My fav at the moment is a VW recipe (Angs leek and lentil soup)
Reminds me, I haven't made it in about 2 weeks....must buy leeks this weekend.
My favorite inexpensive meal is probably the Banana Black Beans from this website, but pretty much anything with lentils, potatoes, or beans is also a favorite!
Vegan Chili
It's hardy, filling, yummy and cheap!
I love me some homemade vegan chili for lunch, with plenty of beans and lots of bell peppers. I'm happy with just about any kind of homemade soup in my lunch, though. Soup is awesome cheap food :).
rice and beans!! and platanitos and tachinos. completely unhealthy (well the rice and beans arent) and sooo good!
Homemade beans and rice - so delicious, easy, cheap, and lasts for several meals! Mmmmmm....
Tomato-cabbage soup. It's really very yummy.

Black beans and corn. I season them different every time. But thats my base and its always oh so good.
Rice and beans (brown rice and either chickpeas or black beans) made with veggie stock and some cajun seasoning. Sooo cheap and so tasty!
Rice and beans-- Tico style especially, called gallo pinto. Also, raw broccoli dipped in salad dressing. EASY and cheap as all get out.
Cold quinoa with frozen blueberries, maple syrup, and cinnamon is my favorite lunch. Super filling and gives me a serious energy boost around lunchtime (which will forever feel like naptime to me!)
what ever was left over from dinner the night before.
Roasties (potato, pumpkin, sweet potato, parsnip - whatever's on hand) chopped and tossed with oil and herbs, then baked. Mmm, winter vegetables.
Soup made from broth that I buy in bulk + veggies from the farmers market and pasta or rice. Cheap cheap and it freezes well!!
Chili - great use of leftovers, too! Just about anything can go in the pot.
