Organic green beans sauteed in walnut oil; topped with thinly sliced organic red onions and toasted organic walnuts. YUM!

I am from Labrador and one o the traditional side dishes that accompany any big meal is a boiled pease pudding - split yellow peas boiled in a bag until they become a solid mush. Then they are mashed together a bit more with lots of butter and salt/pepper. Typically it is boiled in the same pot with a salt-beef dinner... Anyway, because I live with a non-veggie family I appreciate this side dish all the more around Thanks Giving when for everyone else the main focus of the "Big Meal" is typically the meat. Pease pudding is like this heavenly and healthy dish that makes me realize that vegans can be excited forThanks Giving dinner and not miss out on anything!
