Veggie Sausage and vegetables with rice noodles

What you need: 

6 veggie sausages (I like Tofurkey Sausages), chopped into thin slices

1/2 cup onion, chopped

1/2 cup mushrooms, chopped

1 cup celery, chopped

1 medium zucchini, sliced thinly

1 clove garlic, crushed

1 large can of diced tomatoes

salt and pepper to taste

chili flakes to taste if spice is desired

1/4 cup vegan parmesan cheese

1 pacakge of your favorite vegan pasta (I like to use Rice Bow Tie pasta)

What you do: 

In a skillet, brown veggie sausage; remove from pan and place in bowl to be added later. In same skillet add garlic, mushroom, zucchini, onion and celery. Cook veggies until they are tender. Add veggie sausage back in. Add tomatoes and spices. Simmer until hot and bubbling. Cook pasta as per directions on package.Add 1/4 cup of vegan parmesan chesse just before serving.

Serve sauce over pasta and top with vegan parmesan cheese.
