Pumpkin Bread
7/8 of a cup of pumpkin
3/4 of a cup of sugar
1/2 of a cup of unsweetened applesauce
2 tablespoons of flax meal
1 tablespoon of molasses
1 teaspoon of pumpkin pie spice
1 and 5/8 of a cup of flour
1 teaspoon of baking powder
1/2 of a teaspoon of baking soda
1/4 of a teaspoon of salt
6 tablespoons (1/4 + 1/8 of a cup) of water
1 tablespoon of orange juice
1/2 of a cup plus 1/8 of a cup of powdered sugar
It is ridiculous how incredibly good this pumpkin vegan bread is.
Mix together flax meal and water. Add the pumpkin, sugar, applesauce, molasses, and pumpkin pie spice. Then mix in the rest (except for the o.j. and powdered sugar). Bake at 350 degrees Fahrenheit for 1 hour in a cooking spray-erized bread pan. When cooled, mix together the orange juice and powdered sugar. Drizzle it over the vegan bread. Eat.
SO HOW'D IT GO?
From the looks of the recipe you shouldn't need Ener-G. The flaxseed meal mixed with water will be your egg replacer. Recipe looks good! Going to try it next!
