Tofu Malai (Vegan Rasmalai - an Indian sweet)
6 cups soy milk
8 oz (half a packet) tofu
3 cups sugar or sweetener
just a bit of saffron (for color) - (or any yellow coloring agent)
Heat the 6 cups of Soy milk, till the quantity reduces to about 1/3 of the initial quantity. For full flavor, use creamy soy milk. Add 2 cups sugar or sweetener while boiling the milk. ( You can put it on low heat and leave it for about 45 mins). Add coloring/saffron to the milk to give a dark yellow/orange color.
Put 1 cup sugar/sweetener into 4 cups water and heat till you get 2 cups of sugar syrup.
Blend tofu with around 5 tbsp of water till it has become homogenous. Then bake the liquid tofu in the oven at about 350F for 15-20 mins, till it has not fully solidified. The tofu can be shaped into balls. If this is difficult, use some flour (as little as you need). The other option is to break the tofu into very small pieces (almost like grating). Put the balls/pieces into the sugar syrup and heat on low for 15-20 mins. Drain the balls, and put them in the thickened soymilk. Let soak for another 20 mins. Your tofu-malai is ready.
