Tofu Alfredo
What you need:
1/3 cup olive oil
3 or 4 cloves garlic, finely chopped
1 (14 ounce) package soft tofu
1/4 cup green onions, chopped, optional
1/4 cup fresh basil, finely chopped
1/4 cup fresh parsley, finely chopped
1/2 teaspoon fresh black pepper
salt, to taste
What you do:
1. Lightly brown garlic in oil. Let cool. In blender, combine tofu and cooled garlic/oil mixture and blend until smooth and creamy.
2. Add water to adjust consistency. Put tofu mixture in saucepan, add green onions and heat on medium/low for 10 minutes.
3. Add basil, parsley, salt and pepper. Heat for another 3 minutes. Serve over your favorite pasta.
With green onions, you can also add mushrooms, red peppers, or broccoli.

SO HOW'D IT GO?
De-lish! And SO easy! I added 1 tsp of salt and served over zucchini "pasta" and sautéed mushrooms. Hubby liked a lot too, which is great to find another vegan recipe that he'd happily ask for again.
This was very good but i added some red pepper flakes and a lot of salt and pepper, because it can be bland if not spiced up.
I also added some spinach and mushrooms that I sauteed with the onions for a few minuets before adding the tofu sauce.
Overall, very yummy.
This was so good -- better than "real" alfredo if you ask me! I added some garlic powder and nutritional yeast, subbed coconut milk for the water and also used dried parsley/basil.
I made this last night. To tell you the truth, as I was stirring the tofu and Earth Balance mixture in a saucepan, I truly did not have many expectations...but I was very, very happily surprised. After adding the salt, pepper, basil (I used dried because fresh was no available), then fresh parsley and scallions (lots), it started tasting much, much better (of course!). After topping it on my noodles with asparagus and sauteed mushrooms...and then adding nutritional yeast on top...it was VERY, VERY, VERY DELICIOUS and TRULY tasted like ALFREDO!
I LOVED IT and am SO PLEASED!!! Even my picky, very gourmet boyfriend approved which says alot!

i realized halfway through eating it that i had totally left out the basil/parsley/salt/pepper. i added some to my bowl but i guess not enough because it was still a little blah. if i had seasoned it better this could've been a great dish. i'll probably try this again sometime. the texture was great! i also added nutritional yeast, broccoli and mushrooms.
just made this tonight. I was excited when I first came across this. I really enjoy dairy alfredo - and I am trying to veganise myself so I thought I would give this a go. I would give this a 7/10.
At first it seemed a little bland, so I added garlic powder - not sure how much but it was a rather generous amount :P I ended up throwing in white mushrooms (all i could afford) frozen peas, frozen broccoli and onion. I didnt use the green onions partly because i didnt know what they were :P here in australia we call them shallots xD the only pasta I had were dinosaur shapes! so it's very fun to look at indeed ;)b
It tastes like something is missing though - I am thinking next time I make this I am going to include a tablespoon of nutritional yeast, just to give it a little something extra ;)
This made plenty so I have plenty of leftovers - perhaps the flavours will seep in more by the time I reheat it tomorrow :)

Wow! Tastes just like my favorite restaurant I used to eat Alfredo at! I made it with only about 2 tablespoons of oil because I knew 1/3 cup is too much. I used canned mushrooms that I found in my pantry. I put it all over shiratki noodles and it tasted really yummy! Also, it was so good, my so-called tofu hating mother loved it. When I told her there was no cream but only tofu, she flipped. Anyways, thanks for the yummiful sauce, I will definitely make it again! ;)b
Pretty good. I added some nutmeg, lemon and a little bit of crushed red pepper. It was a yummy little dish!
Man, this was sooo good. But then I added some frozen fake meatballs and ruined it. literally. the meatballs fell apart and got all mushy and it was terrible. i dumped the whole pot of it in the trash and now i have delicious french bread with no pasta to go with it! I cant wait to make it again. I added a big scoop of tofutti cream cheese and that made it awesome.
okay this was awesome! i cut the recipe in half just for my husband and i. i added broccoli, put in 6 garlic cloves (i love garlic) and a good mount of parm cheese (vegan). i didnt have any basil but i added some dried oregano and a dash of nutmeg. soo good.
