Vegie Pizza

What you need: 

pizza crust
1/2 cup home-made pesto sauce
1 small eggplant sliced 1/4
1 small red onion sliced into rings 1/4
1 med zucchini sliced 1/4

What you do: 

Spread pesto sauce over pizza crust. In 1 tablespoon of olive oil, saute Eggplant, Red Onion and Zucchini until limp. Top pesto topped pizza crust with vegies. Bake in 350 oven for 15 minutes.
