Pasta & Spinach Saute
1 pkg of organic angel hair durum pasta
1 lb fresh organic baby spinach leaves or Swiss chard
1 medium organic Vidalia or sweet yellow onion
3 teaspoons (or to taste) minced organic garlic
1-1/2 tablespoons olive oil
1 tablespoon sesame or walnut oil
sea salt to taste (optional)
Cook pasta al dente according to package directions or to desired tenderness (about 3 to 5 minutes). Remove from heat and drain. Set aside
Slice onion into rings. Heat 1-1/2 tablespoons olive oil over medium low heat add onion rings. Saute onion rings until translucent. Add minced garlic stir about 1 minute over heat. Add spinach leaves and stir until bright green (do not over cook). Remove from heat. Add pasta, sesame or walnut oil to spinach and toss lightly together. Salt to taste (optional)
Serve immediately as a side dish or light meal.
SO HOW'D IT GO?
Haven't tried it.... YET! Definitely a must try! It's quick, easy, and needs very few ingredients... what a broke & busy college student needs!
I just had this for my dinner and it was great! I had some spinach that needed using up & wanted dinner quickly.
Few changes (as there always is!!):
I used only sesame oil for frying & didn't add any more at the end.
I did add some red bell pepper, just coz it was there in my fridge.
I also added freshly ground pepper & soy sauce instead of salt
