Spinach Tortillas
2 1/2 cups flour
3 cups spinach (fresh not canned)
1 tablespoon salt
1/4 cup vegetable oil
1 cup water
dash of garlic powder
1 tablespoon olive oil
Using a food processor place spinach and process until it becomes a paste. Add the Olive Oil and process a few seconds. Scrape down the sides as necessary.
In a large bowl mix flour, spinach paste, salt, and garlic powder. Mix in oil. Then add the water and mix/knead until the dough is smooth. Cover bowl with a towel and let sit for approximately 45 minutes.
Divide dough in six equal portions.
With generous amounts of flour on work surface, roll out with a rolling pin or just spread out with your hands (like tossing a pizza crust) and cook on a non-stick pan set between medium and low heat. The tortilla should cook on each side for about 25-35 seconds (it's done when small brown spots appear.)

So I was looking around for tortilla recipes and came across this one awhile ago and yesterday decided to give them a try. I have been trying to make most of my own breads and tortillas and this recipe reminded me how easy it is really can be so no excuses. Anywhoo the only thing is- I did end up having to add about 1 cup more flour while kneeding to get these to be formable. Also I used spelt flour, warm water and olive oil. Next time I'm going to use half unbleached white flour and half spelt flour. Super tasty with a tofu and chanterelle scramble this morning.

these were very delicious! Mine turned out just a little doughy, but they still tasted great. I couldn't help but eat them plain as a snack. I need to make them again and try putting stuff inside them, i bet they'll taste even better! :-*
