Lime, Ginger & Cilantro Rice Noodles

What you need: 

1/2 pound rice noodles
2 tablespoons vegetable oil
1 teaspoon mustard seeds
3 green chilies
1/2 inch ginger grated
4 curry leaves
salt to taste
1/4 teaspoon pepper
1/4 teaspoon sugar
juice of a lime
1/4 cup cilantro chopped
grated zest of 1/2 a lime
1 teaspoon sesame oil

What you do:

Put a large pot of water to boil, when it boils add the rice noodles, stir, cook for about 5 minutes, till tender. Drain and put it back in the same pot, keep aside.
Meanwhile heat the vegetable oil in a skillet, add mustard seeds, when they splutter, add the green chilies, ginger, curry leaves and stir for a minute or two.
Add turmeric, pour this on the noodles. Add salt, pepper, sugar, lime juice, cilantro, lime zest, and sesame oil. Stir well to combine. It will take a lot of stirring to get all the noodles well seasoned.
